    In a kadhai, add all the ingredients for the paste one by one and slow roast until light golden brown and aromatic. Add in the coconut at the end to prevent it from browning. Let it cool and blend into a semi-smooth paste.

    In a mixing bowl, add the tamarind and pour water. Let it soak for 15 minutes. Extract the tamarind water and set aside.

    In the same kadhai, pour oil and add in diced brinjal and tomato. Sauté on a medium flame for 1 minute, pour water and bring to a boil. Cook the brinjal for 3-4 minutes or until soft and cooked through. Add in jaggery, salt and asafoetida and mix well.

    Add in the cooked dal, prepared paste and the tamarind water. Bring it to a boil.

    For the tempering, add in coconut oil, mustard seeds, dried red chilli, grated coconut and curry leaves. Add in the tempering and mix well. Serve hot.
