Cookd masalas for rava
Method
Get ready by measuring the rava, sugar and milk. Keep the cashews and raisins ready, and set aside the cardamom powder.
Heat the ghee in a kadai on low flame. Fry the cashews and raisins for 1 to 2 minutes, until the cashews turn light golden and the raisins puff up. Remove them to a bowl.
Add the rava to the same kadai and roast on low flame for 4 to 5 minutes. Stir continuously until it smells roasted but does not change to dark brown.
Boil the milk in a separate heavy pan on medium flame for 6 to 8 minutes, until it is hot and begins to rise. Lower the flame before adding it to the roasted rava.
Pour the hot milk into the rava slowly while stirring. Cook on low flame for 7 to 8 minutes, until the rava is soft and the payasam thickens without raw rava smell.
Add the sugar and cardamom powder and mix well. Cook for 2 to 3 minutes, until the sugar dissolves and the payasam is smooth. Stir in the fried cashews and raisins, then serve warm.
