    In a pan, add gingelly oil along with the shallots. Saute for 3 minutes, or until lightly golden and starting to soften. Then add the whole spices, curry leaves and garlic. Cook for an additional 2 minutes, or until fragrant.

    Transfer the mixture to a blender along with the gundu chilli, turmeric and water. Blend into a smooth paste.

    In a kadai, heat gingelly oil. Add mustard seeds and curry leaves, and let them splatter. Add the paste and water and mix to combine well. Bring the rasam to a single boil before switching it off and garnishing with coriander leaves. Serve hot with ghee rice!
