    For the sheets, in a bowl take the maida, salt and oil and mix to combine well.

    Add water and knead a medium soft, smooth dough. Cover and rest the dough for 20 mins.

    Knead the dough until smooth and divide into small roundels.

    Dust with dry flour and roll the sheets thin.

    To roll them completely thin. Apply oil on two of the sheets and dust with maida.

    Layer them one on top of the other, three pieces in total and roll them out until very thin dusted with some maida as needed.

    Cook them on a tava placed on a low heat. Cook both sides but without developing any colour. The sides must slightly dry out.

    Take them off the tava and gently peel the layers. The sheets are ready.

    In a wok, heat oil and add the chopped ginger, garlic and green chillies, saute until aromatic.

    Add the remaining cut vegetables except the spring onion greens and saute until tender on a high flame.

    Add the salt, pepper, vinegar, red chilli sauce, soya sauce, spring onion and ketchup. Mix well to combine.When the mixture is dry, transfer to a plate and allow the mixture to cool completely.

    Prepare a thick mixture of maida and water to stick the spring roll ends.

    To make the spring rolls, place some mixture on one end of the sheet and tuck the ends in, gently but tightly try to roll them, seal with the maida paste.

    Deep fry them in a low flame for a minute or two and then in medium hot oil until golden brown and crispy, about 4 mins.
