Sultani dal, or Lucknowi dal: toor dal simmered with milk, cream and curd, smoked with hot coal and ghee. Mild, serves 4, 35 minutes plus soaking, video.

Wash the dal till water runs clear and soak for 30 minutes. Strain it and put it in the cooker. Add 1 cup of water and ½ tsp turmeric powder and cook it for 3-4 whistles, take it off the flame and let the pressure reduce gradually. Open the lid.

Mix the dal well and add milk, cream and curd to it and mix it well. Cook it on a low flame till the mixture thickens. Turn off the flame.

Place a small bowl with a hot piece of coal on top of the dal. Add a tablespoon of ghee and close the lid immediately and leave it for 5-7 minutes and then take the coal out.

In another pan, heat 2 tbsp oil, add cumin seeds, garlic, dry red chillies and let it crackle

Add the chopped onions and cook it to a golden brown color

Turn off the flame and add the red chilli powder and mix it well.

Transfer the dal mixture to the tadka, mix it well. Check the seasoning.

Top it off with a tablespoon of ghee. Garnish it with coriander sprigs. Serve it hot with rice or roti.
