Cookd masalas for brinjal
Method
Wash and wipe the brinjal. Prick it all over with a fork and rub it with 1 tsp oil.
Roast the brinjal directly on a medium gas flame. Turn it every 2 minutes for 10 to 12 minutes, until the skin is black all over and the brinjal is very soft.
Let the brinjal cool for 10 minutes. Peel off the burnt skin, cut off the stem and mash the flesh roughly with a spoon. Chop the green chilli and coriander leaves.
Whisk the curd with the salt until smooth. Add the mashed brinjal, green chilli and coriander leaves, and mix well.
Heat 2 tsp oil in a small tadka pan on medium flame. Add the mustard seeds and let them splutter. Add the urad dal and chana dal, and fry for 1 minute until golden. Add the asafoetida, dry red chilli and curry leaves, and fry for 10 seconds.
Pour the tadka over the mosaru bajji and mix. Serve with hot rice or chapati.
