Cookd masalas for tamarind
Method
Soak the tamarind in 1050 ml warm water for 30 minutes, until it is soft and easy to squeeze.
Squeeze the soaked tamarind well with clean hands. Add 210 ml water, extract the pulp and strain it into a bowl until only seeds and fibres are left in the strainer.
Heat oil in a small kadai on low flame for 1 minute until hot. Add cumin and fry for 30 seconds until fragrant. Add asafoetida, dry ginger powder and red chilli powder, and stir for 30 seconds until the raw smell reduces without burning the spices.
Pour in the strained tamarind pulp. Boil on medium flame for 3 minutes, stirring once or twice, until the raw tamarind smell reduces.
Add jaggery and salt. Simmer on low flame for 20 minutes, stirring often, until the jaggery dissolves and the chutney lightly coats a spoon. Take off the heat and cool for 30 minutes before transferring to a clean, dry airtight jar.
