    In a mixing bowl, add all the dry ingredients for the dough and mix thoroughly. Make a well in the centre, and pour water. Mix and knead the dough for 7-10 minutes, or until it is hydrated, soft, and supple. Cover the dough and let it rise for 35-40 minutes or until 1 ½ in size.

    For the sauce, in a pan, pour oil, add the seasonings and minced garlic. Saute until fragrant- making sure not to burn the chilli flakes. Add the chopped onion and sauté until the onions turn translucent.

    Pour the tomato puree, add salt and sugar and cook until the sauce turns into a thick paste. Finish the sauce with ketchup and cook until the raw flavour disappears.

    Once the dough has risen, on a floured surface, stretch the dough, making sure not to deflate the dough entirely. Add the stretched dough into a pan, and add in the tomato sauce the cheese and any topping of your choice. Cover and let it cook for 5-6 minutes on a low flame or until the cheese is melted.
