Cookd masalas for mackerel (ayala)
Method
Get ready by rinsing the mackerel pieces. Rub them with 1 teaspoon salt and 1/2 teaspoon turmeric powder. Slice the shallots, finely chop the ginger, garlic and tomato, slit the green chillies, and wash the curry leaves. Soak the kudampuli (Malabar tamarind) pieces in 100 ml warm water for 10 minutes and keep them aside with the water.
Heat 1 tablespoon coconut oil in a clay pot or kadai on medium flame for 1 minute until hot. Add the fenugreek seeds and fry for 1 minute until they start to sizzle. Add the shallots, ginger, garlic, green chillies and 2 sprigs curry leaves. Fry for 4 to 5 minutes until the shallots soften.
Add the tomato and cook on medium flame for 4 minutes until soft. Add Cookd Kerala Fish Curry Masala, red chilli powder and turmeric powder. Fry on low flame for 2 minutes until the raw smell goes.
Pour in 400 ml water and add 3/4 teaspoon salt. Mix well and boil on medium flame for 6 minutes until the gravy becomes slightly thick.
Add the soaked kudampuli pieces with their water. Boil on medium flame for 3 minutes until the gravy turns a little sour. Taste and adjust the salt if needed.
Place the marinated mackerel pieces in the gravy in one layer. Cover and cook on low flame for 8 to 10 minutes until the fish is opaque, flakes easily and is cooked through. Gently shake the pot instead of stirring with a spoon.
Heat 1 teaspoon coconut oil in a small pan on medium flame for 1 minute until hot. Add 1 sprig curry leaves and fry for 1 minute until crisp. Pour this over the curry and switch off the flame. Rest the curry for 5 minutes before serving.
