Cookd masalas for beans
Method
Wash the beans, green chillies and curry leaves. Trim the beans and cut them into small pieces. Peel and finely chop the shallots, deseed and slit the green chillies, and grate the coconut. Pat the curry leaves dry so they do not splutter in hot oil.
Heat the coconut oil in a kadai on medium flame for 1 minute until hot. Add the mustard seeds and let them crackle for 30 seconds. Add the curry leaves and fry for 30 seconds until they stop spluttering.
Add the shallots and green chillies. Fry on medium flame for 2 to 3 minutes until the shallots turn soft and lightly golden.
Add the beans, turmeric and salt. Pour in the water, mix well, and cover the kadai. Cook on low flame for 8 to 10 minutes until the beans are tender but still hold their shape.
Add the grated coconut and mix gently. Cook uncovered on low flame for 3 to 4 minutes until the extra moisture dries and the raw smell of the coconut goes.
Switch off the flame and rest the thoran for 2 minutes. Serve warm as a dry side with rice.
