Method

  1. 1

Get ready: Peel the beetroot and cut it into small cubes. Keep the water for boiling, grinding and kneading separate.

  2. 2

Boil the beetroot cubes with the boiling water in a small pan on medium flame for 12 to 15 minutes, until a knife passes through easily. Drain and cool them for 5 minutes.

    Water

  3. 3

Grind the cooled beetroot with the grinding water in a mixie until smooth. Add the wheat flour, salt and kneading oil to a bowl, then mix in the beetroot puree. Add the kneading water little by little and knead for 5 to 8 minutes until the dough is firm, smooth and not sticky.

  4. 4

Cover the dough and rest it for 15 minutes. Divide it into 12 equal balls and keep them covered so they do not dry out.

  5. 5

Heat the frying oil in a kadai on medium-high flame for 4 to 5 minutes. The oil is ready when a small piece of dough rises quickly without becoming dark at once.

  6. 6

Roll one dough ball into a 10 to 12 cm poori and keep it slightly thick. Slide it into the hot oil and deep fry: press it gently with a slotted spoon and fry for 30 to 45 seconds on each side until puffed and lightly golden. Drain it and deep fry the remaining pooris in the same way, about 15 minutes for all 12.
