    In a pan, dry roast the peanuts, kopra and sesame seeds separately.

    In the same pan, add oil and saute the sliced onion till brown.

    Take out the onion, add whole garlic cloves and saute the garlic till it is brown. Add the sliced ginger and saute it for 30 secs. In a mixer-grinder, add the above mentioned ingredients, along with kashmiri chili powder, cumin powder, coriander powder,turmeric powder, salt, garam masala and coriander leaves. Make a coarse mixture.

    Wash the brinjals and slit it. Stuff the brinjals with the filling and keep it aside

    Heat oil in a pan. Add mustard seeds and let it splutter. Add the chopped onion and saute till it begins to brown. Add the tomato and saute for a minute. Add Kashmiri red chili powder and saute for a minute.

    Add water and cover the gravy, let it cook till the brinjals are soft. Adjust the seasoning. Garnish with chopped coriander leaves.
