Cookd masalas for cabbage
Method
Remove the outer leaves from the cabbage. Rinse the cabbage, carrot, green chilli and curry leaves, then drain them. Shred the cabbage, peel the carrot and cut it into thin sticks. Slit the green chilli, remove the stem from the dry red chilli and keep the grated coconut ready. Pat the curry leaves dry so they do not splutter in hot oil.
Heat oil in a kadai on medium flame for 1 minute until hot. Add mustard seeds and fry for 30 seconds until they splutter. Add urad dal, dry red chilli, curry leaves and green chilli, and fry for 30 seconds until the dal turns light golden.
Add cabbage, carrot, turmeric powder, salt and water. Mix well, cover and cook on medium flame for 6 to 7 minutes until the vegetables are cooked but still have a slight bite.
Remove the lid and cook on medium flame for 2 to 3 minutes until the extra water dries up. Add grated coconut and mix gently.
Cook for 1 minute on low flame until the coconut is warm and the poriyal looks dry. Switch off the flame and serve hot.
