Cookd masalas for wheat flour
Method
Put the wheat flour and half the salt in a bowl. Add 1 tsp oil and the water a little at a time. Knead into a soft dough. Cover and rest for 15 minutes.
Beat the eggs in a bowl. Add the onion, green chilli, coriander leaves, black pepper powder, turmeric powder and the rest of the salt. Mix well.
Divide the dough into 8 balls. Roll one ball into a small circle. Brush with a little oil, fold in half, brush again and fold into a triangle. Roll it out into a thin triangle. Do the same with all the balls.
Heat a tawa on medium flame. Cook one paratha for 1 minute on each side, until light brown spots appear and it puffs a little.
Stir the egg mix. Pour about 1/8 of it on the hot tawa with 1 tsp oil and spread it a little. Press the half-cooked paratha on top of the egg at once.
Cook for 1 to 2 minutes until the egg sets and sticks to the paratha. Flip, add a few drops of oil and cook for 1 more minute until both sides are golden. Make the rest the same way and serve hot with green chutney or ketchup.
