Method

    In a mixer jar add all the ingredients and blend into a coarse paste and set aside.

    In a bowl, add the tamarind, pour water and let it soak for 10-15 minutes

    In a deep pan or a kadhai, pour ghee and add the mustard seeds, dried red chilli, urad dal and curry leaves. Once they splutter, add in the garlic, tomato and saute.

    Once aromatic, add the prepared paste and cook on a medium flame for 2-3 minutes or until the raw flavour disappears. Pour the prepared tamarind water and bring it to a boil. Cover and let it boil for 5-6 minutes.

    Pour in the tender coconut water, garnish it with coriander leaves and serve hot.
