Put the cauliflower florets into a bowl and cover with hot water. Cover with a lid and set aside for 5 minutes.

Drain the cauliflower and add it to a bowl. Add the maida, cornflour, salt, Kashmiri red chilli powder and salt. Mix until there is an even coating on the cauliflower pieces. Sprinkle water as required.

Heat oil in a pan and deep-fry the cauliflower on medium-high heat until golden brown. Remove and set aside.

Heat oil in a pan and add the fennel seeds, followed by the curry leaves, garlic, green chilli and onion. Saute until the onion turns translucent. Add the powdered spices and salt. Saute for 1 minute, then add a splash of water.

Add the fried cauliflower and toss until evenly coated. Add lemon juice and coriander leaves, and give it a final toss.
