Add tamarind to a bowl and add water. Let it soak for 10 minutes and then dissolve it. To a bowl of rice, add water and wash it, let is soak and reserve the water.

Heat oil in a pan, add mustard, urad dal, curry leaves, green chilli and let it crackle. Add the shallots and saute till it turns translucent.

Add ginger garlic paste and saute for a minute. Add the drumstick, potato and saute it for 2 minutes.

Add turmeric powder and mix it well for a few seconds. Add the tomato and cook it for a minute. Add salt and mix well. Add water and rice water, mix it well. Cover and simmer for 10 minutes.

Open the pot, add the tamarind pulp, brinjal and mix it well. Cover and simmer for 5 minutes.

Add the coconut paste, simmer it to a soft boil and turn off the flame. Garnish it with chopped coriander. Serve it hot.
