Andhra-style kattu pappu is a thin toor dal pressure-cooked with onion and green chilli, with a garlic ghee tempering. Mild, serves 3, 20 minutes, with video.

Add the washed toor dal to a pressure cooker along with 2 cups of water. Slowly bring it to a boil.

Add the slit green chilli, red chilli powder, turmeric powder and onion. Once the water is boiling, close the lid and pressure cook for 6 whistles on a medium heat.

Once the pressure has naturally released, open the lid and mash the dal along with adding 1 cup of water to thin out the consistency. Bring the dal to a simmer and add salt.

For the tempering, heat the ghee in a small pan. Add the garlic and saute until it starts to turn lightly golden brown. Then add the urad dal and cumin seeds. Once the urad dal is lightly golden, add the mustard seeds, curry leaves, hing and dry red chillies Cook for another 30 seconds before adding it directly to the dal. Mix to combine well.
