Method

    Knead the flour, salt, sugar, egg and water together. Add more water if required to form a smooth and soft dough. Knead for 10 minutes continuously.

    Apply oil and rest for 1 hour. Divide and roll the dough into even spheres and apply oil on them.

    Roll out a portion of dough into a very thin sheet. Apply oil over the rolled dough.

    Fold the sheet of dough to form layers. Gather it into a spiral.

    Flatten the dough spirals using your hands. Cook on a heated Tawa on medium flame until completely cooked.

    Shred 4 Parottas into small pieces and set aside.

    In an iron pan, heat oil and add the onion, green chilli, curry leaves and tomato.

    Add in the shredded Parotta and mix well. Add the egg, pepper and salt.

    Add in the empty Salna. Mix well and cook for 1 minute, while breaking up any large bits of Parotta. Transfer it to a plate and serve it hot.
