Cookd masalas for raw mango
Method
Get ready: Wash the raw mango and wipe it dry. Grate it with the skin, removing the seed as you grate.
Roast the fenugreek seeds in a dry kadai on low flame for 2 minutes until lightly browned. Cool them briefly and crush them.
Heat the gingelly oil in a kadai on medium flame for 2 minutes until hot. Add the mustard seeds and fry for 30 seconds until they splutter and the popping reduces.
Lower the flame and add the asafoetida, turmeric powder and red chilli powder. Stir for 30 seconds until the raw smell of the chilli reduces, then add the grated mango and salt.
Mix well and cook on medium-low flame for 10 to 12 minutes. Stir every few minutes until the mango softens and most of its moisture dries.
Add the crushed fenugreek seeds and mix. Cook on low flame for 3 to 4 minutes until the thokku becomes thick and the oil shows at the sides.
Spread the thokku on a clean plate and rest it for 30 minutes until it reaches room temperature. Serve it or transfer it to a clean, dry container.
