In a pan add all the ingredients for the powder, and dry roast on a low medium flame for 3 minutes or until aromatic. Blend the prepared ingredients into a fine powder and set aside.

In a kadhai, pour oil add the mustard, and fenugreek seeds and saute until the mustard seeds splutter. Add curry leaves, garlic and shallots, and saute until the shallots turn translucent (around 3 minutes) Pour the tamarind water, salt and turmeric powder and bring it to a boil.

Add the prepared powder to the kozhambu and cook until it thoroughly thickens. Finish the gravy with asafoetida and curry leaves and serve hot.
