Cookd masalas for peanuts

Method

    In a bowl, add the peanuts. Add salt, Kashmiri chilli powder, cumin powder, asafoetida, ginger garlic paste and mix. Add 1 tbsp of water too, just enough to wet the peanuts. Add besan and rice flour. Mix well to coat evenly, sprinkling water as required.

    Heat oil over medium flame. Separate the peanuts and drop them into the oil. Fry until it turns crispy and golden brown. Remove from the oil.

    Fry the curry leaves in the same oil. Remove it as soon as it gets crispy, which will only take a few seconds. Set this aside.

    In a small bowl, combine together all the ingredients for the spice mix. Add the fried curry leaves also and mix well until evenly combined. Add this to the fried peanuts and toss. Store in an airtight container for up to 2 weeks.
