Wash and soak the rice for 20 mins.

Heat ghee in a pot and add the mustard seeds, once they splutter add the cumin seeds and saute for a minute. Add the sliced onions and saute until translucent. Add the ginger-garlic paste and saute till the raw aroma goes.

Add the red chilli powder, turmeric powder, salt and goda masala. Add the diced vegetables and mix well.

Add the rice and peanuts and mix well. Cook until the water and rice are of the same level.

Cover and cook for 14 mins on a low flame. Fluff the rice with a fork and add chopped coriander.
