Cookd masalas for mutton

Method

  1. 1

Rinse the broken wheat twice and soak it in water for 2 hours. Drain it well, then rinse the mutton and keep it ready. Peel both onions; roughly chop one and thinly slice the other. Deseed and slit the green chillies and finely chop the coriander leaves.

  2. 2

Add the soaked wheat, mutton, water, roughly chopped onion, ginger garlic paste, green chilli, turmeric, cinnamon, cardamom, cloves, peppercorns and salt to a pressure cooker. Close the cooker and pressure cook on medium flame for 6 whistles, until the mutton is soft and comes away from the bone. Let the pressure release on its own for about 15 minutes.

Heat oil in a kadai on medium flame for 1 minute until hot. Add the sliced onion and curry leaves, and fry for 8 to 10 minutes until the onion is golden. Keep this fried onion aside for serving.

  4. 4

Remove the mutton pieces from the cooker and take out the bones. Return the meat to the cooker. Remove the whole cinnamon and cardamom if easy to do.

  5. 5

Mash the wheat and mutton well with a ladle or potato masher. Simmer on low flame for 12 to 15 minutes, stirring often, until the wheat breaks down and the harees becomes thick and smooth. Mix in up to 250 ml hot water if it is too thick.

  6. 6

Heat ghee in a small pan on low flame for 30 seconds until melted. Add black pepper powder and stir for 30 seconds until it sizzles. Pour this over the harees and mix well.
