Cookd masalas for rice
Method
Rinse the rice two or three times until the water is nearly clear, then drain it well. Wash the green chillies and coriander leaves. Peel and thinly slice the onions, slit the green chillies, and chop the coriander leaves.
Heat oil in a pressure cooker on medium flame for 1 minute until hot. Add cinnamon, cloves, cumin and green chilli. Fry for 1 minute until the cumin sizzles.
Add the sliced onion, salt and ginger garlic paste. Fry on medium flame for 5 to 6 minutes until the onion turns light golden and the raw smell goes.
Add the rinsed rice and turmeric powder. Fry gently on medium flame for 1 to 2 minutes until the rice is coated with the oil. Pour in the water and check the salt.
Close the pressure cooker and cook on medium flame for 2 whistles. Switch off the flame and let the pressure release naturally for about 10 minutes, until the pressure pin drops. Open the cooker and check that the rice is tender and the water has been absorbed.
Add the coriander leaves and gently fluff the rice with a fork. Rest it for 5 minutes until the excess steam settles, then serve hot.
