Method

    Process the pineapple- peel it and cut the core out. Wash the peel and make a chunky puree with the core.

    Roughly crush the cumin seeds, peppercorns, garlic for the masala For the base, add all the base ingredients in a stock pot and let it simmer. Add the crushed masala. Let it simmer.

    Remove the peel, once the rasam has simmered.

    For the tadka, in a pan, add oil, mustard seeds, let it splutter, then add curry leaves, gundu chili, asafoetida. Pour it over the rasam. Garnish with coriander leaves.
