Cookd masalas for ragi flour
Method
Preheat the oven at 180°C for 10 minutes until it reaches the set temperature. Grease a 12-cup muffin tray with 1 tsp oil.
Sieve the ragi flour, maida, baking powder, baking soda and salt into a bowl for 2 minutes until no lumps remain. Mix until the dry ingredients are even.
Mash the bananas in another bowl until smooth. Add the sugar, oil, vanilla essence and milk. Whisk until well mixed and the sugar starts to dissolve.
Add the wet mixture to the dry mixture. Fold gently just until no dry flour remains. Do not overmix.
Divide the batter equally among the 12 muffin cups, filling each about three-quarters full. Bake at 180°C for 20 to 25 minutes until the tops are set and a toothpick comes out clean.
Cool the muffins in the tray for 5 minutes until they are easy to handle. Move them to a plate and serve.
