Ragi pakoda from a batter of ragi flour, roasted gram flour, moringa leaves and cumin, deep-fried by hand. Quick, mild, makes 6, 20 minutes, with video.

To a bowl add the ragi flour, Roasted Gram powder, Red Chilli powder, moringa leaves, salt, Cumin seeds and water and mix it into a thick batter.

Heat oil in a kadai. Take little parts of the batter with your hands and drop them in to the oil. Deep fry them for 3-4 minutes on a medium flame . Transfer it to a plate lined with tissue. Garnish it with some fried curry leaves and serve it hot.
