Cookd masalas for ragi flour
Method
Get ready by peeling and finely chopping the onion and green chillies. Wash and finely chop the coriander leaves.
Add the ragi flour, rice flour, onion, green chilli, coriander leaves, cumin and salt to a bowl. Reserve 3 tablespoons of the water, then add the remaining water little by little and whisk until the batter is smooth and thin. Rest it for 10 minutes.
Check the batter after resting. Add some or all of the reserved water if it has thickened. The batter should flow easily from a ladle like thin dosa batter.
Heat a tawa on medium flame for 2 minutes until hot.
Stir the batter and pour a ladleful from the outside of the tawa towards the centre without spreading it. Drizzle a little oil around the edges and cook on medium flame for 2 to 3 minutes until the bottom is set and lightly browned. Flip and cook for 1 to 2 minutes until the other side has brown spots and the centre is cooked through. Repeat with the remaining batter to make about 4 chillas, stirring before each one.
Serve the ragi chilla hot with coconut chutney or curd.
