Cookd masalas for ragi flour
Method
Get ready by measuring the ragi flour and grated coconut. Keep the puttu maker, cylinder and lid ready.
Dry-roast the ragi flour in a dry kadai on low flame for 3 to 4 minutes, stirring continuously until it feels dry and lightly warm. Transfer it to a wide bowl and cool for 5 minutes until it is no longer hot.
Warm 130 ml water for 2 minutes until just warm, not boiling. Mix in the salt until it dissolves.
Sprinkle the warm salted water little by little over the cooled ragi flour. Rub it between your palms for 3 minutes until it looks like coarse crumbs; it should hold its shape when squeezed and crumble when pressed. Cover and rest for 5 minutes.
Pour 350 ml water into the lower part of the puttu maker and heat on medium flame for 4 minutes until it boils steadily. Keep the water boiling while you fill the cylinder.
Fit the perforated disc in the puttu cylinder. Place some grated coconut in the cylinder, then add half the moistened ragi flour loosely. Repeat the coconut and flour layers without pressing, ending with coconut. Fix the cylinder on the puttu maker and steam for 7 to 8 minutes until steam comes steadily from the top vent for 3 minutes; remove carefully with a cloth. Repeat with the remaining flour and coconut. Push the puttu out and serve hot.
