Therattipal: milk boiled down with constant stirring, then cooked with jaggery into soft grains with cardamom and ghee. Makes 4 servings in 65 minutes, video.

Method

To a pan, add milk and let it heat up. Start stirring the pan to avoid milk from burning at the bottom of the pan. Once the milk starts to boil, reduce the flame to medium and keep mixing the milk gently. As it starts to reduce, scrape off the milk solids sticking to the sides of the pan. Keep mixing and scraping the sides off on a medium flame patiently till the milk starts to thicken (at this point it would have reduced to ¼ of it original quantity)

At this point add jaggery and keep mixing till the jaggery dissolves. As the jaggery keeps dissolving, the milk will start to curdle. Keep mixing continuously. Add cardamom powder and keep mixing till the excess moisture evaporates. Finally add ghee, give it one final mix and take it off the flame. Let it cool down. Serve it garnished with chopped cashew nuts and enjoy.
