    Crush the shallots, ginger, garlic and green chillies.

    Add it to a pot with the powdered spices, curry leaves and coconut oil. Smash and mix well. Add the thin coconut milk, add 2 tbsp of thick coconut milk to the water.

    Place it on the stove. When it comes to a simmer, add the mango pieces. Cook for 5 mins.

    Add the kovakkai, the ends cut off and slit down the center. Cover and cook for 5-7 mins until tender. Finish with the thick coconut milk and switch off the stove.

    In a tempering pan, heat coconut oil and add the sliced shallots. Fry till golden brown. Add the curry leaves, mix and pour into the gravy. Serve hot with rice.
