Method
Keep a puttu maker and a mixing bowl ready. Grate the coconut and keep it aside. Check that the holes in the puttu mould are clear.
Roast the wheat flour in a kadai on low flame for 5 to 6 minutes. Stir often until the flour is warm and the raw smell goes; do not let it change colour.
Add salt to the roasted flour. Sprinkle water little by little and mix with your fingers until the flour looks like wet sand and holds its shape when pressed, without becoming a dough.
Heat the water in the bottom pot of the puttu maker on high flame for 5 to 7 minutes until it boils steadily. Divide the moistened flour and grated coconut into 2 portions. Place a little coconut in the mould, add one portion of flour in loose layers, and finish with coconut.
Fit the mould over the boiling pot and steam on medium flame for 8 to 10 minutes until the puttu is firm and the flour is cooked through. Push it gently onto a plate, fill the mould with the remaining flour and coconut, and steam the second batch for 8 to 10 minutes until cooked through.
