Cookd masalas for beetroot
Method
Rinse the moong dal and soak it in the water for 60 minutes until slightly softened. Drain it well and press out the extra water.
Wash and peel the beetroot, then grate it. Grate the coconut. Wash and finely chop the green chilli and coriander leaves, and wash the curry leaves.
Add the drained dal, beetroot, coconut, green chilli and coriander leaves to a bowl. Mix gently until evenly combined.
Add the salt and lemon juice. Mix well and check that the dal is soft but still has a slight bite.
Heat the oil in a small kadai on medium flame for 1 minute until hot. Add the mustard seeds and fry for half a minute until they crackle. Add the urad dal, curry leaves and asafoetida, then fry for 1 minute until the dal is light golden.
Pour the tempering over the kosambari and mix once. Serve at once, or chill for up to 30 minutes before serving.
