Cookd masalas for moong dal
Method
Get ready by rinsing the rice. Cut the potatoes into large cubes, chop the tomato and coriander leaves, and make a paste of the ginger.
Roast the cleaned, dry moong dal in a dry pressure cooker on low heat for 4 to 5 minutes. Stir often until it turns light golden and smells nutty, then transfer it to a bowl.
Cool the roasted dal for 5 minutes until warm. Rinse and drain it, then mix it with the rinsed rice and keep it ready.
Heat the oil in the same pressure cooker on medium heat for 1 minute until hot. Lower the flame, add the cumin, bay leaves, cinnamon and dry red chilli, and fry for 1 minute until the cumin splutters.
Add the ginger paste and fry on medium heat for 1 minute until the raw smell goes. Add the potatoes, tomato, turmeric, cumin powder and red chilli powder, then cook for 3 to 4 minutes until the tomato softens and the potatoes are coated.
Add the rice and roasted dal mixture, salt and water. Mix well and bring it to a boil on high heat for 5 to 7 minutes until the water is bubbling well.
Close the pressure cooker and cook on medium heat for 3 whistles. Let the pressure release naturally for about 10 minutes until the pressure pin drops. Open the cooker only after all pressure has released; the rice and dal should be soft and porridge-like.
Stir in the garam masala, ghee and coriander leaves. Cook on low heat for 2 minutes until the ghee mixes in. Serve hot.
