Method

    Wash the toor dal until the water runs clean

    Add the washed toor dal and water into a pressure cooker and pressure cook on a low to medium flame for 4 whistles (around 7-8 minutes) and set aside.

    Heat 1 tbsp of oil in a kadhai. ⁠Add 15–20 peeled shallots (100 g) and 1 chopped tomato (70 g). Add the diced Drumsticks, pour ½ cup of water and let it cook for 5-6 minutes on a low to medium flame. Instead of Drumsticks, you can add any vegetable of choice- 1 Cup (100g)

    Close the lid and cook on a low- medium heat for 10 minutes.

    In another pan, heat 2 tsp oil, add ¼ tsp mustard seeds and let them splutter, add 1 dried red chilli and some curry leaves. Add the tempering to the sambar, finish with 1 tsp ghee and fresh coriander leaves.
