Cookd masalas for sweet corn
Method
Get ready by washing the sweet corn and curry leaves. Keep the coconut grated and coriander leaves finely chopped.
Steam the sweet corn with water for 15 minutes until the kernels are tender. Cool for 5 minutes until safe to handle, then remove the kernels from the cobs.
Heat oil in a kadai on medium flame for 1 minute. Add mustard seeds and let them crackle, then add urad dal and fry for 2 minutes until golden. Add dry red chilli, curry leaves and asafoetida, and fry for 1 minute until the chilli darkens slightly.
Add the cooked corn kernels and salt. Toss on low flame for 2 to 3 minutes until the corn is hot and coated with the tempering. Switch off the flame, mix in grated coconut for 30 seconds, then add coriander leaves and serve warm.
