    Heat water in a pan and add the de-seeded chillies to it. Boil the chillies for 5 minutes. Strain the chillies and blend it to a fine paste. Keep it aside.

    In a bowl, make a batter with maida, cornflour, salt, pepper, msg and water.

    Add the vegetables to the batter and mix it till the vegetables are coated well with the batter.

    Heat oil in a pan and deep fry the batter coated vegetables till they become crispy. Keep it aside.

    To prepare the sauce, heat oil in a wok, add garlic, ginger and saute it for a few seconds.

    Add coriander stem and fry it for a few seconds.

    Add the chilli paste and cook it till oil separates from it.

    Add soy sauce, tomato ketchup and mix it well. Add a little water, mix it, bring it to a boil and let it thicken.

    Add the fried vegetables and toss it on a high flame till it is coated well with the sauce. Take it off the flame and serve it immediately, garinshed with chopped spring onions.
