Cookd masalas for idli dosa batter
Method
Mix the ready idli dosa batter gently in a bowl. Add water little by little until it is thick but pours easily. Add salt only if the batter is not already salted.
Heat a tawa on medium flame for 2 to 3 minutes. Sprinkle a few drops of water; they should sizzle and disappear. Wipe the tawa and spread a little oil.
Pour one ladle of batter in the centre and spread it into a thin dosa with the back of the ladle. Spread 1 teaspoon of ghee around the edges and over the dosa. Cook on medium flame for 2 to 3 minutes until the top looks dry and the bottom is golden.
Loosen the edges with a spatula. Roast on medium flame for 1 minute until the dosa is crisp. Fold or roll it and remove it from the tawa.
Wipe and lightly oil the tawa before making the next dosa. Make 7 more dosas with the remaining batter and ghee, cooking each dosa on medium flame for 3 to 4 minutes until the top is dry, the bottom is golden and the dosa is crisp.
