    Heat oil in a pan/ wok. Splutter the mustard seeds. Add the onions and saute until translucent, about 3-4 mins. Add the curry leaves. Add the tomatoes and saute until soft, about 3-4 mins.

    Whisk the eggs in a bowl, and pour them over the masala. Cover and cookd for 2-3 mins. Flip and cook for a further 2 mins. Finish with fresh coriander leaves. Serve hot with plain, soft bread for a quick and easy breakfast.
