Cookd masalas for chicken
Method
Peel and thinly slice the onion, and chop the tomatoes. Slit the green chillies, rinse the curry leaves, and wash and chop the coriander leaves. Cut the cleaned chicken into curry-size pieces if needed. Pat the curry leaves dry so they do not splutter in hot oil.
Mix the chicken with turmeric powder and salt in a bowl. Marinate for 10 minutes until all the pieces are evenly coated.
Heat the oil in a kadai on medium flame for 1 minute until hot. Add cinnamon, cloves, cumin and curry leaves, then fry for 30 seconds until the cumin sizzles. Add the onion and green chillies, then fry for 8 to 10 minutes until the onion is golden.
Add the ginger garlic paste and fry on medium flame for 2 minutes until the raw smell goes. Add the tomatoes and salt, then cook for 6 to 8 minutes until the tomatoes are soft and the oil shows at the sides.
Add Cookd Guntur Masala, coriander powder and red chilli powder. Fry on low flame for 1 minute until the raw spice smell fades. Add the chicken and cook for 3 to 4 minutes until the pieces turn white on the outside.
Pour in the water and boil on high flame for 3 minutes until the curry bubbles steadily. Cover and cook on low flame for 18 to 20 minutes until the chicken is tender, there is no pink flesh near the bone and the juices run clear.
Remove the lid and simmer on medium flame for 3 to 5 minutes until the gravy coats the chicken pieces. Add the coriander leaves and switch off the flame.
