Cookd masalas for raw mango

Method

  1. 1

Wash the vegetables, raw mango, green chillies and curry leaves. Peel the raw banana and yam. Cut the raw banana, yam and carrot into thick sticks, and cut the drumstick and beans into 5 cm pieces. Slice the mango thickly, grate the coconut and slit the green chillies; keep the mango separate. Pat the curry leaves dry so they do not splutter in hot oil.

  2. 2

Grind the grated coconut, green chillies, cumin and water in a mixie to a coarse paste. Stop when the coconut is evenly crushed and no large pieces remain.

  3. 3

Add the yam, raw banana, drumstick, carrot, beans, turmeric, salt and water to a kadai. Cover and cook on medium flame for 10 to 12 minutes, stirring gently once or twice, until the vegetables are almost cooked but still firm.

  5. 5

Add the coconut paste and mix gently. Cook on low flame for 3 minutes until the raw coconut smell goes and the paste coats the vegetables without making a gravy.

  6. 6

Pour in the coconut oil and add the curry leaves. Mix once and cook for 1 minute on low flame, then switch off when the avial looks moist but not watery.
