Cookd masalas for raw mango
Method
Get ready by washing, peeling and cutting the raw mango into medium cubes. Grate the coconut and jaggery. Remove the stems from 5 dry red chillies, break the other 2, peel and thinly slice the shallots and rinse the curry leaves. Soak the tamarind in 100 ml warm water.
Heat 1 tsp coconut oil in a kadai on low flame for 1 minute until hot. Add the grated coconut and roast for 8 to 10 minutes, stirring, until deep reddish-brown but not burnt. Add the coriander seeds, 5 dry red chillies, fenugreek seeds and cumin and roast for 2 more minutes. Cool for 3 minutes, then grind with 180 ml water to a smooth paste.
Add the raw mango, turmeric powder, salt and 150 ml water to a kadai. Cook on medium flame for 8 to 10 minutes until the mango is tender but still holds its shape.
Pour in the strained tamarind pulp. Boil on medium flame for 3 minutes until the raw tamarind smell goes.
Add the roasted coconut paste and jaggery. Mix well and simmer on low flame for 10 to 12 minutes until the gravy thickens, coats a spoon and oil shows at the sides. Add a little of the extra water only if it gets too thick.
Heat the coconut oil in a small tadka pan on medium flame for 1 minute until hot. Add the mustard seeds and let them splutter. Add the 2 broken dry red chillies, curry leaves and shallots and fry for 3 to 4 minutes until the shallots are golden.
Pour the tempering over the gravy and mix gently. Rest for 5 minutes before serving.
