    Boil the potatoes whole with skin in salted water until they can be pierced easily with a fork. Peel the potatoes and mash them.

    Pressure cook the mutton with ginger and salt for 3 whistles. Reduce the flame to low after the 1st whistle.

    Coarsely mince the cooked mutton in a mixer or a food processor.

    Heat oil in a pan and saute onion, ginger, curry leaves and green chilli. Add the cooked mutton and the potato. Add pepper, garam masala and salt. Saute until any excess moisture has evaporated.

    Once the mixture has cooled slightly, shape the mixture into cutlets.

    Dip the cutlets first in beaten eggs and then in breadcrumbs. Shallow fry until golden brown on both sides.
