Cookd masalas for mutton

Method

  1. 1

Get ready by rinsing the rice until the water is mostly clear. Clean the mutton and cut it into small cubes. Roughly chop one onion; finely chop the other onion, garlic, beans and spring onion; slit the green chillies; and cut the carrot and capsicum into small cubes.

  2. 2

Add the mutton, roughly chopped onion, ginger garlic paste, turmeric, salt and water to a pressure cooker. Pressure cook on medium flame for 4 whistles, then let the pressure release on its own. Open the cooker and check that the mutton is soft with no raw-looking centre. Remove and shred the mutton, and reserve the cooking liquid.

  3. 3

Add the rinsed rice, water and salt to a pot. Cover and cook on medium flame for 12 to 15 minutes until the water is absorbed and the rice is cooked with separate grains. Spread the rice on a wide plate and cool it for 15 minutes until it reaches room temperature.

Heat the oil in a wide kadai on high flame for 1 minute. Add the garlic and green chilli, then fry for 1 minute until the raw smell reduces. Add the finely chopped onion and fry for 3 to 4 minutes until it turns light golden.
