Paal pongal, or milk pongal: rice and roasted moong dal pressure-cooked, loosened with milk, topped with ghee-fried cashews. Serves 4, 35 minutes, with video.

Rinse and soak the rice for 20 mins.

Dry roast the moong dal until aromatic and wash it well.
Moong Dal

Add the soaked rice and moong dal to a cooker with salt and water and pressure cook for 3 whistles, allow the steam to escape naturally.

Lightly mash the rice and dal mixture.

In a separate pan, fry cashew nuts in ghee until golden brown.

Place the mixture back on a low flame and add the milk in additions, mixing well in between.

Once all the milk has been blended in, switch off the flame.

Add the fried cashew nuts and the leftover ghee into the paal pongal, serve warm.
