    Soak the chana dal, moong dal and urad dal for 4 hours.. Once soaked, remove all the water from the dals and add them to a grinder or mixer. Add in the Salt and the hing. Without adding any water, grind the dal into a coarse paste and make sure it’s not liquidy.

    Remove the batter in a bowl. Beat this batter vigorously for 6-8 minutes until the color changes from pale yellow to white. The Batter will be aerated and fluffy. Wet your hands with water and start scooping the batter into small portions and directling put them in the hot oil, continue frying on medium heat until all the sides are golden and crispy.

    Add in the coriander, onion, green chili, salt and lemon juice in a blender. Paste it with the water into a fine chutney. Sprinkle the amchur powder and drizzle the coriander chutney, serve hot!
