Cookd masalas for sweet potato
Method
Peel the sweet potatoes and cut them into small, even cubes. Rinse the cubes and curry leaves, then drain them well. Slit the green chilli and grate the coconut. Pat the curry leaves dry so they do not splutter in hot oil.
Heat the oil in a kadai on medium flame for 1 minute until hot. Add the mustard seeds and cook for 1 minute until they splutter. Add the urad dal, curry leaves, green chilli and asafoetida, then fry for 1 minute until the dal turns light golden.
Add the sweet potato, turmeric powder, salt and water. Mix well, cover and cook on low flame for 8 to 10 minutes until the cubes are tender but not breaking apart.
Open the kadai and add the red chilli powder. Cook uncovered on medium flame for 4 to 5 minutes, turning gently, until the water dries and the edges are lightly roasted.
Add the grated coconut and mix gently. Cook on low flame for 1 to 2 minutes until the coconut is warm and the poriyal is dry.
