In a pan, pour water and bring it to a boil. Add the Maggi noodle cakes and cook until 90% done. Strain and cool immediately, save ½ cup of the noodle water.

Crush cumin seeds, whole black pepper in a mortar and pestle and set aside.

In a non-stick pan, pour ghee, add the crushed cumin seeds and black pepper and chopped ginger, green chilli, curry leaves, asafoetida and cashews.

Once the cashews turn golden brown, add the cooked maggi and mix thoroughly. Add in two tablespoons of cooked moong dal, ¼ cup of the reserved noodle water and mix thoroughly. Garnish with chopped cashews and fried curry leaves.
