Cookd masalas for cabbage
Method
Rinse the moong dal, then soak it in water for 60 minutes. Drain it well in a colander and keep it aside. The dal should be soft enough to bite but not mushy.
Rinse the cabbage, carrot, coriander leaves, green chilli and curry leaves. Peel the carrot, then finely chop the cabbage, coriander leaves and green chilli. Grate the carrot and coconut, and keep the curry leaves ready.
Add the drained moong dal, cabbage, carrot, coconut and coriander leaves to a mixing bowl. Add salt and lemon juice, then mix gently until the salt is spread evenly.
Heat oil in a small kadai on medium flame for 1 minute until hot. Add mustard seeds and fry for up to 1 minute until they splutter. Add urad dal, green chilli, curry leaves and asafoetida, then fry for 1 minute until the urad dal turns light golden.
Pour the tempering over the salad and mix gently until evenly combined. Serve immediately so the cabbage stays crunchy.
